Product Spotlight: Norwegian Baked Knekkebrød

As an avid snack enthusiast, nothing makes me happier than checking out new snacks at the Co-op. Minutes of waiting in line for the cashier and looking at the snack shelves to my right has made me discover a lot of great snacks: taralli crackers, Partake Foods cookies, you name it. As I browsed through the snack shelves this week I discovered something new and interesting: Norwegian Baked Knekkebrød. I’ve never seen anything like it. And as I walked back home and took a small bite, I realized that I’ve never tasted anything like it as well.

Produced in a small-batch facility in Brooklyn, the knekkebrød is categorized as a crispbread: it’s thicker than a cracker but thinner than a piece of bread. It has that lightness when you bite into it, however, it still gives you a full, hearty bite. What makes me more impressed is that it’s vegan and free of wheat nuts. Its organic rye flour base is complemented by sea salt flakes and various oats and seeds, including sunflower seeds, pumpkin seeds and flaxseed. The knekkebrød is great to eat on its own. However, I like to enjoy mine with some Conscious Cultures vegan cream cheese spread and a drizzle of Trade Street Jam Co.’s Plum and Rose jam. Absolutely delicious!

So if you see a package of Norwegian Baked Knekkebrød next time you’re waiting in line at the Co-op, don’t hesitate and grab a 6-ounce bag for $6.82. You won’t be disappointed, I promise you.
