Celery Apple Salad
This recipe has been regularly featured at our co-op's food demonstrations around Brooklyn and is a hit with recipe-tasters of all ages. It's few, simple ingredients make it easy to shop for and quick to whip up when you're hungry. The fresh and crunchy apple, celery and walnuts are a great addition to heavier fall and holiday food menus, too! Be sure to try it out this season.
Celery Apple Salad
Ingredients:
-6-8 medium celery stalks (including leaves)
-1/3 cup roughly chopped walnuts
-2 tbsp. freshly squeezed lemon juice
-½ tsp. sea salt, ½ tsp. pepper
-2 tbsp. extra virgin olive oil
-1 large apple
2 tbsp. Dijon-style mustard
Directions:
In a small skillet over medium heat, toast the walnuts for 3-4 minutes, shaking the plan for even browning. Slice the celery stalks into pieces ½ inch wide or less and chop the leaves. Chop the apple into bite-sized pieces. Throw the celery, celery leaves, and apples into a bowl and cover with mustard, lemon juice, olive oil and salt and pepper. Sprinkle nuts on top of the fresh salad once they are toasted and slightly cooled. Mix together and serve for a meal or a snack.
